Protein Pancake Recipe GF/DF

Mmm Sunday morning pancakes are the best way to say sayonara to your hangover and start the day happy. Here is my recipe for protein pancakes, however feel free to substitute any ingredients and experiment some more.
Get away from the nasty white flour and refined sugar and try these babies, just as easy and even more tasty!

Ingredients:

3/4 cup Almond Meal
1 tblsp Ground Flaxseed
1.5 tblsp Protein Powder (I use VP2 because it has no added sugar but is still sweet)
2 Eggs
1/2 cup of Almond Milk
1/2 tsp baking soda

Note: I added blueberries to my batter.

Method:

Stir all ingredients together.

Leave for 5 minutes to rest.
Oil pan with coconut oil, pour 2 tblsp of mixture onto pan.
Fry until bubbles, flip.
Remove from pan once cooked.
Eat and enjoy!
